Yunnan Ham Yunnan Ham (Xuanwei Ham) is reputed as one of the three famous types of ham in China, the other types being Jinhua ham in Zhejiang and Rugao Ham in Jiangsu. Local pig called Wumeng pig is selected as the material of Yunnan ham , and generally it is perserved during the time from the first frost to the spring of next year. It should experience half year's natural fermentation after being perserved, thus features the Ham with small bones, thin skins, rich flesh, tender meat, fragrant aroma and beautiful color. Local restaurant normally stew Xuanwei Ham with soybeam while family steam it on top of rice, both methods will make delicious Yunnan Ham.
Steam-Pot Chicken Steam-Pot Chicken is a famous local specialty of Yunnan. It is renowned for its unique way of cooking, fragrant aroma and rich nutrition. Steam-Pot Chicken became popular in southern Yunnan during the reign of Emperor Qian Long of the Qing Dynasty. Jianshui County is famous for pottery products. A craftsman named Yang Li created a special steampot with an empty pipe in the middle. When chickens are steamed, they are put in the pot with some ingredients such as pseudo - ginseng and covered. Then the steampot is put in a larger pot filled with water. The chicken is cooked by the steam, and the steam gathers and combines with the chicken in the steampot. Therefore the chicken is tender, delicious and nutritious.
Yiliang Roast Duck It would be a pity to leave Yunnan without trying Yiliang Roast duck. Base on the historical recourds , the Yiliang Roast duck is from the Royal recipe which was brought into Yunnan when emperor Zhu Yuan-zhang expel political opponents from northern China. This recipe plus the exercising Yiliang duch from the mountain and the riner bank make the best taste of southern roast duck. First ducks must be split open, dressed, scalded, dried and painted with honey. When roasting, it's better to use dry pine tree leaves as firewood to lend more flavor to the duck. A steady temperature must be maintained in the over. Ducks must be rotated so that they can be evenly roasted. It takes about 50 minutes to roast. When the skin turns crisp and golden brown, the duck is done.
Mushroom Chafing Dish Yunnan is mountainous province with rich resources like Chinese herb, rare plants and the famous mountain treasure--mushroom. Mushroom Chafing Dish will be traveler's first choice after they already feel bored with the other local flavor. Hundreds of different wild mushrooms can be put into a big clay pot with fire burning from the bottom . Most of the mushroom are rich in protein, amino acid, various kinds of vitamins and carbohydrates, they work well in treating diabetes, cancer and tumour .The most important is, except the health protection, Mushroom Chafing Dish is so delicious that hard to eulogize.
Famous Local Snacks
Cross-bridge Rice Noodle Cross-bridge rice noodle is famous and unique local food of Yunna. Before the meal, a bowl of hot sou[, a bowl of rice noodles, some slices of meat, fresh vegetable slices and some other ingerdients are to be perpared. The soup is the most important, which is boiled from chicken, duck and pig bones. It is rather hot although there is no steam flowing from it. When there are ready, first put in the row meat slices and stir them till they are done; then put in the ingredients, vegetable slices and rice noodles. It is delicious as the meat is very tender. Most of the good restaurants in Lijiang are located in the old town, and many have very high standards of cooking, producing a wealth of tasty local specialties.
As the tourist industry develops, more and more restaurants have begun serving western food, and their cooking standards are fairly good.
Among these places, the Bridge Cafe serves good western food and the best coffee, and the Old Market Cafe is popular with foreign travelers and is the best place to get access to travel information.
