The ethnic cuisines of Xishuangbanna are characterized by unique features; especially the one with Dai flavor has developed a school of its own. The most common cooking ways are including grill, fry, braise, chop, pickle and seldom stir-fry. Smelling sweet and tasting crisp, sour, spicy and fresh, the cuisines are highly praised by tourists from home and abroad.
Famous Local Dishes
Roast fish with citronella is a traditional dish of the region. Crammed with salt, shallot, ginger and chili, a fresh fish will be bound by citronella and roasted on the charcoal fire. It is fresh and crisp, with a faint scent of citronella.
Acid bamboo shoot boiled chicken is a typical dish of Dai cuisine. Getting rid of the sour, acid bamboo shoot is boiled with chicken. At last, the chicken is fried with shallot, ginger and chili which are fried beforehand. With sour and spice, it tastes appetizing and refreshing.
Braised chicken in banana leaf is a traditional dish of Dai minority. Gently beaten with the back of a knife blade and preserved in salt, pepper, shallot, ginger and hot pepper about half an hour, the chicken wrapped by banana leaf is braised in a wooden container. This refreshing dish is delicious and beautiful as well.
Chicken porridge, a popular traditional dish made by Hani people, can be served either as staple food or dish. Chopped-up chicken is stewed in rice with a little amount of ginger, chili, aniseed, salt and lard until the rice and chicken are thoroughly cooked.
Soup of Fresh fish in cobbles is a specialty of Bulang Zu. First, cobbles taken from a river are toasted until they are red in a fireplace. Then they are put into a boiler filled with clean water and fresh fish. When the water is boiled, a toasted salt is added in the soup. With an aroma of the toasted cobbles, the soup tastes specially sweet and delicious.
Yellow ant egg is an award-winning local food which enjoys several recipes. Three cooking ways are mostly used.
After quick-boiled, the ant eggs are put on a tray until they are cold and dressed with sauce made of cooked tomato, shallot, garlic, caraway and chili.
Ant eggs are mixed with shallot, ginger, garlic and green pepper, which are then wrapped in a banana leaf and are lastly steamed in a pot till it is thoroughly cooked.
Ant eggs are boiled with tomatoes and caraway about 10 minutes.
Famous Local Snacks
Deep-fried lichen is the most popular dish in this region. Dai people drag and wash the lichen in the river, add some seasonings after being sun-baked and finally make it into the shape of a cake. Mostly it is in the cooking way of being deep-fried and tastes sweet and crisp. In the summer, it can be cooked in the soup or made cold and dressed with sauce. With a faint scent and tasting smoothly, it functions as an antidote.
Tomato Nanmi, that is ketchup, is made of tomatoes and other sauces. After cooked and decorticated, tomatoes are pounded to pieces and are pestled thoroughly with shallot, ginger, coriander, chili, and salt. Sour, hot and sweet, it is a good appetizer and be beneficial to digest.
Preserved cow tendon, a famous dish of Dai Zu, tender and soft in nature, tastes sour, savory and cool.
Chrysalides of bee: the chrysalides of Fantu bee, yellow-waist bee, white-feet bee, black bee, and calabash bee can be served as food to be a dish when drinking.
